Ingredients
Scale
- 200 grams of pasta
- 6 eggs
- Salt, to taste
- Pepper, to taste
- 4 tablespoons of butter
- 70 grams of Parmesan cheese, grated
- 100 grams of bacon, chopped
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and set aside.
- In a skillet, cook the chopped bacon until crispy. Remove bacon and set aside, leaving a bit of the fat in the pan.
- Add the butter to the same skillet. Once melted, add the drained pasta and toss to coat in the butter.
- Crack the eggs directly into the pan with the pasta. Stir continuously over low heat until the eggs gently cook and coat the pasta.
- Add grated Parmesan cheese, cooked bacon, salt, and pepper. Mix well until creamy and fully combined.
- Serve hot, optionally topped with extra cheese or chopped herbs.
Notes
- Stir the eggs continuously to avoid scrambling—you’re aiming for a silky sauce.
- Add a splash of reserved pasta water if the mixture is too thick.
- Try using pancetta or turkey bacon for variations.
- This recipe works best with spaghetti, fettuccine, or other long pasta shapes.
