A Game-Changer for Busy Nights: Air Fryer Chicken and Vegetables

A quick, healthy, and delicious air fryer meal that combines tender, juicy chicken with perfectly roasted veggies. Packed with protein and flavor, this dish is perfect for busy weeknights!

Main Ingredients:

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 bunch broccoli, cut into florets (approx. 1 ½2 cups)
  • 1 red bell pepper, seeded and chopped
  • 1 zucchini, cut into half-moons
  • 1 small onion, coarsely chopped
  • 3 tablespoons olive oil
  • ¼ cup shredded parmesan cheese (optional)

Seasoning Blend:

  • 1 ½ teaspoons paprika
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • ½ teaspoon dried basil (optional)
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

Step 1: Prep the Air Fryer
Preheat the air fryer to 400ºF for at least 3 minutes, or as per the manufacturer’s instructions.

Step 2: Season the Chicken
In a large bowl, whisk together olive oil, paprika, garlic powder, onion powder, dried basil, salt, and pepper. Cut the chicken into 1-1 ½” cubes and toss in the seasoned oil mixture until well coated.

Step 3: Add the Veggies
Add the broccoli, bell pepper, zucchini, and chopped onion to the bowl. Toss again to distribute the seasoning and oil evenly.

Step 4: Air Fry in Batches
Transfer half of the mixture to the preheated air fryer basket, spreading it in an even layer. Cook for 10 minutes, turning the chicken pieces halfway through and stirring the vegetables to ensure even browning.

Step 5: Check for Doneness
Ensure the thickest portion of the chicken reaches an internal temperature of at least 165ºF. Remove from the air fryer and repeat with the remaining batch.

Step 6: Serve & Enjoy!
Transfer the cooked chicken and veggies to a bowl, garnish with parmesan cheese (if desired), and serve immediately.

Oven Option: Broil on a parchment-lined baking sheet for 10-11 minutes, turning the chicken and stirring the vegetables halfway through.

  • For extra crispiness, avoid overcrowding the air fryer basket.
  • Swap out veggies based on preference—mushrooms, carrots, or asparagus work great!
