Ingredients

Scale
  • 160g banana (about 1 large banana), mashed
  • 110g carrots, finely grated
  • 200g instant rolled oats
  • 150g dried fruits (such as raisins, dates, or apricots), chopped
  • 2 tablespoons shelled sunflower seeds
  • 2 tablespoons sesame seeds
  • 120ml milk (or water or orange juice for a different flavor)
  • 0.5 teaspoon baking soda

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  • In a large mixing bowl, combine the mashed banana, grated carrots, oats, dried fruits, sunflower seeds, and sesame seeds.
  • Add the milk (or your preferred liquid) and mix well. Stir in the baking soda and allow the mixture to sit for 10 minutes.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for 25-30 minutes, or until the cake is firm and lightly golden on top.
  • Remove from the oven and let cool before slicing. Serve as is, or with a drizzle of honey or nut butter for extra flavor.

Notes

  • For a more classic carrot cake flavor, add cinnamon, nutmeg, or a splash of vanilla extract.
  • Swap banana with unsweetened applesauce if desired.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • This cake freezes well—slice before freezing for easy grab-and-go portions.
