  • 1/2 cup unsalted butter, softened
  • 1 cup plain yogurt (full-fat preferred)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 tsp salt

Optional Oat Streusel Topping:

  • 3 tbsp unsalted butter
  • 3 tbsp brown sugar
  • 3 tbsp all-purpose flour
  • 3 tbsp old-fashioned rolled oats
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat & Prepare:
    • Preheat oven to 375°F (190°C).
    • Line a 12-cup muffin tin with paper liners or grease with butter.
  2. Prepare the Muffin Batter:
    • In a large bowl, whisk together flour, oats, cinnamon, nutmeg, baking powder, baking soda, and salt.
    • In a separate bowl, cream butter and sugars until light and fluffy.
    • Mix in the egg and yogurt until fully combined.
    • Gradually fold in the dry ingredients, mixing until just combined.
    • Gently fold in chopped apples without overmixing.
  3. Prepare the Oat Streusel Topping (Optional):
    • In a small bowl, mix butter, brown sugar, flour, oats, and cinnamon until crumbly.
  4. Fill & Bake:
    • Spoon the batter into muffin tins, filling each about 3/4 full.
    • Sprinkle streusel topping over each muffin (if using).
    • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
    • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  5. Serve & Enjoy:
    • Enjoy warm or at room temperature with coffee, tea, or milk.
