Ingredients

  • 2 tablespoons olive oil
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, until wilted. Remove from heat.
  3. In a greased baking dish, spread the sautéed spinach evenly across the bottom.
  4. Carefully crack the eggs on top of the spinach, spacing them evenly apart.
  5. Sprinkle the shredded cheddar cheese over the eggs, followed by the salt, black pepper, garlic powder, and paprika.
  6. Bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
  7. Remove from the oven and let cool for a minute. Garnish with fresh parsley before serving.
