- 2 cups fresh spinach, chopped
- 4 large eggs
- 1/2 cup shredded cheddar cheese

- 1/4 teaspoon paprika
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, until wilted. Remove from heat.
- In a greased baking dish, spread the sautéed spinach evenly across the bottom.
- Carefully crack the eggs on top of the spinach, spacing them evenly apart.
- Sprinkle the shredded cheddar cheese over the eggs, followed by the salt, black pepper, garlic powder, and paprika.
- Bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
- Remove from the oven and let cool for a minute. Garnish with fresh parsley before serving.
