1 tablespoon olive oil
½ cup diced onion
1 tablespoon chopped garlic
2 pounds ground chicken
1 teaspoon kosher salt
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon dried parsley
8 ounces tomato sauce or marinara
1 tablespoon balsamic vinegar
8 ounces mozzarella pearls or torn fresh mozzarella
10 ounces cherry tomatoes, halved

Preheat Oven:
