Cheesy Beef Dorito Casserole is a delicious and comforting dish that combines ground beef, beans, corn, and cheese with crunchy Doritos for a satisfying meal.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 packet (1 ounce) taco seasoning
  • 3 cups Doritos, crushed (any flavor)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
  3. Stir in the black beans, corn, diced tomatoes (with juices), and taco seasoning. Cook for an additional 3-4 minutes until heated through.
  4. In a large mixing bowl, combine the crushed Doritos, 1 cup of cheddar cheese, sour cream, and milk. Mix until well combined.
  5. In a greased 9×13-inch baking dish, layer half of the Dorito mixture on the bottom. Top with the beef mixture, then add the remaining Dorito mixture on top.
  6. Sprinkle the remaining 1 cup of cheddar cheese over the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for 5 minutes before serving. Garnish with chopped cilantro if desired.
