- 1 cup fresh broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- In a large pot, bring water to a boil and blanch the chopped broccoli for 2-3 minutes until bright green. Drain and let cool.
- In a mixing bowl, combine the blanched broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Form the mixture into small patties, about 2-3 inches in diameter.
- Heat olive oil in a large skillet over medium heat. Once hot, add the patties in batches, cooking for 3-4 minutes on each side until golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce or as a side dish.

- For a spicier kick, add 1/4 teaspoon of cayenne pepper or chopped jalapeños to the mixture.
- Substitute the cheddar cheese with mozzarella or feta for a different flavor profile.
