This Cheesy Taco Pasta is the perfect mashup of taco night and pasta night—boldly seasoned ground beef, tangy salsa, tender shells, and melty cheese all come together in one skillet for a creamy, comforting, and totally crave-worthy dinner the whole family will love!

Ingredients

Scale
  • 1 pound ground beef (85/15 for best flavor)

  • 2 tablespoons taco seasoning (use store-bought or homemade)

  • ¾ cup water

  • 1 cup jarred salsa

  • 8 ounces pasta (medium shells are ideal)

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

Instructions

  • Cook the Beef
In a large skillet over medium-high heat, brown the ground beef until no longer pink. Drain any excess fat.

  • Season the Meat
Add the taco seasoning and water to the beef. Stir and simmer for 3–4 minutes until the sauce thickens slightly.

  • Add Salsa
Stir in the salsa and reduce the heat to low. Let the mixture simmer gently while you cook the pasta.

  • Boil the Pasta
In a separate pot, cook the pasta shells according to package directions until al dente. Drain the pasta.

  • Combine and Melt
Add the cooked pasta to the skillet with the beef mixture. Sprinkle in the cheddar and mozzarella cheeses. Stir until the cheese melts and the pasta is coated in a creamy, cheesy taco sauce.

  • Serve
Spoon into bowls and serve warm. Garnish with fresh herbs, extra cheese, or your favorite taco toppings if desired.

Notes

  • Customize It: Add in corn, black beans, or bell peppers for a veggie boost.

  • Spice Level: Use hot salsa or add a pinch of chili flakes for more heat.

  • Cheese Variations: Pepper jack or a Mexican blend can be used for extra flavor.

  • Leftovers: Reheat gently with a splash of milk or water to keep the pasta creamy.
