Cheesy Taco Spaghetti is a delicious twist on traditional spaghetti, combining the flavors of tacos with pasta for a hearty meal.


Ingredients

  • 8 ounces spaghetti
  • 1 pound ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 1 ounce)
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 cup shredded cheddar cheese
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  3. Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  4. Stir in the taco seasoning, diced tomatoes (with juice), tomato sauce, and corn. Bring the mixture to a simmer and let it cook for about 5 minutes.
  5. Add the cooked spaghetti to the skillet and toss to combine. Cook for an additional 2-3 minutes until everything is heated through.
  6. Remove from heat and stir in half of the shredded cheddar cheese until melted. Top with the remaining cheese and cover the skillet for a few minutes until the cheese is melted.
  7. Season with salt and pepper to taste. Garnish with fresh cilantro or green onions if desired.

  • For a vegetarian version, substitute the ground meat with black beans or lentils.
