Instructions
- Prepare the zucchini – Grate the zucchini, sprinkle with salt, and let it sit for 10 minutes. Squeeze out excess moisture using a clean kitchen towel.
- Combine ingredients – In a mixing bowl, add the zucchini, grated carrot, oatmeal, eggs, green onions, minced garlic, and shredded cheese. Stir well to combine.
- Heat the oil – In a large skillet, heat olive oil over medium heat.
- Cook the fritters – Scoop small portions of the mixture into the pan, flatten slightly, and cook for 3–4 minutes per side until golden brown.
