Ingredients

Scale

For the Chicken:

  • 2 large chicken breasts (or thighs for extra juiciness)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon butter or olive oil

For the Luxurious Sauce:

  • 2 cloves garlic, minced
  • ½ small onion, finely chopped
  • ½ cup chicken broth
  • 1 (5.2-ounce) package Boursin Cheese (Garlic & Fine Herbs)
  • ½ cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Sear the Chicken – Season both sides of the chicken with salt, pepper, and Italian seasoning. Heat butter or olive oil in a large skillet over medium heat. Sear the chicken for 5 minutes per side until beautifully golden. Remove and set aside.
  2. Create the Flavor Base – In the same pan, add minced garlic and chopped onion. Stir for 2 minutes until fragrant and softened.
  3. Build the Creamy Sauce – Pour in the chicken broth and scrape up any browned bits from the pan. Let it simmer for a minute before adding the Boursin cheese. Stir until fully melted.
  4. Perfect the Texture – Lower the heat and pour in the heavy cream. Whisk gently until the sauce thickens into a velvety consistency.
  5. Bring It Together – Return the chicken to the pan, spooning the sauce over each piece. Let it simmer for 3–5 minutes until the chicken reaches an internal temperature of 165°F.
  6. Serve & Garnish – Sprinkle with fresh parsley and serve immediately over mashed potatoes, rice, or roasted vegetables.

Notes

  • Add a Crunch – Top with toasted breadcrumbs or crispy bacon bits for extra texture.
  • Vegetable Boost – Stir in spinach or mushrooms for added nutrients.
  • Make it Low-Carb – Serve with cauliflower mash or zucchini noodles.
  • Leftovers? – Store in an airtight container for up to 3 days and reheat gently over low heat.
