- 2 pounds boneless, skinless chicken breasts
- 1 packet ranch seasoning mix (1 ounce)
- 8 ounces cream cheese, softened
- 1 cup shredded pepper jack cheese
- 1 cup chicken broth
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- In a slow cooker, place the chicken breasts and pour the chicken broth over them.
- Sprinkle the ranch seasoning mix evenly over the chicken.
- Add the softened cream cheese on top of the chicken and broth.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken using two forks and stir everything together until well combined.
- Stir in the shredded pepper jack cheese and crumbled bacon, mixing until the cheese is melted and creamy.
- Season with salt and pepper to taste.
- Serve warm, garnished with sliced green onions.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the mixture before cooking.
- Serve over rice, in a tortilla, or on a bun for a delicious twist.
