- 2 large apples, cored and diced
- 1 cup shredded carrots
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts (optional)
- 1/4 cup fresh parsley, chopped
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced apples, shredded carrots, dried cranberries, and chopped walnuts (if using).
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
- Pour the dressing over the apple and carrot mixture and toss gently to coat all the ingredients evenly.
- Add the chopped parsley and toss again to combine.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled and enjoy!
Notes
