For the Salad:

  • 1/3 portion cabbage, shredded
  • 1 large carrot, julienned or grated
  • 1 cucumber, julienned or thinly sliced
  • 1 apple, julienned or thinly sliced

For the Lemon Dressing:

  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey (or maple syrup)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Prepare the Salad – Shred the cabbage, julienne or grate the carrot, and slice the cucumber and apple.
  2. Make the Dressing – In a small bowl, whisk together lemon juice, olive oil, honey, salt, and black pepper.
  3. Toss & Serve – In a large bowl, combine all the salad ingredients, drizzle with the dressing, and toss until evenly coated.
  4. Garnish & Enjoy – Sprinkle with fresh parsley if desired and serve immediately.

Notes

  • For extra crunch, add chopped nuts like walnuts or almonds.
  • To prevent apples from browning, toss them in a little lemon juice before adding to the salad.
