- 3 pounds whole chicken, cleaned and patted dry
- 1 tablespoon olive oil
- 1 tablespoon paprika
- 1 tablespoon garlic powder

- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper (optional for heat)
- 1 lemon, juiced
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F.
- In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne pepper (if using).
- Rub the spice mixture all over the chicken, making sure to get under the skin and inside the cavity.
- Drizzle the lemon juice over the chicken and stuff the cavity with the minced garlic.
- Place the chicken breast-side up on a roasting pan or baking dish.
- Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F and the skin is crispy and golden brown.
- Let the chicken rest for 10-15 minutes before carving. Garnish with fresh parsley before serving.
