Instructions
- Grate the potatoes, sprinkle with salt, and let them sit for 5 minutes. Squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, mix the grated potatoes, eggs, shredded cheese, flour, onion, black pepper, and garlic powder until well combined.
- Heat olive oil in a large skillet over medium heat.
- Scoop small portions of the mixture into the pan, flatten slightly, and cook for 3–4 minutes per side until golden and crispy.
- Remove from the pan and place on a paper towel to drain excess oil.
- Serve hot with sour cream, yogurt, or your favorite dipping sauce.
