- 2 medium potatoes, peeled and boiled
- 1 egg
- ¼ cup grated Parmesan cheese
- 2 tablespoons all-purpose flour
- 1–2 spring onions, chopped
- ½ cup breadcrumbs
- Salt and pepper, to taste
- Oil, for frying
Instructions
- Mash the boiled potatoes in a medium bowl until smooth. Let cool slightly.
- Add the egg, Parmesan cheese, flour, and chopped spring onions. Season with salt and pepper.
- Mix everything until well combined and shape into small patties (about 2 tablespoons of mixture each).
- Coat each patty in breadcrumbs, pressing gently to help them stick.
- Heat oil in a skillet over medium heat.
- Fry the patties for 2–3 minutes on each side or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with sour cream, yogurt dip, or your favorite sauce.
