Ingredients

Scale
  • 2 tbsp flax seeds
  • 7 tbsp water
  • 500g cabbage, shredded (about 4 cups)
  • 200g carrots, shredded (about 2 cups)
  • 2 tbsp all-purpose flour (or chickpea flour for gluten-free)
  • 1 tsp baking powder
  • 1 tsp turmeric
  • Salt, to taste
  • Black pepper, to taste (optional)
  • Olive oil, for frying

Instructions

  • Prepare the Flax Egg

    • In a small bowl, mix the flax seeds with water. Let sit for 10 minutes until thickened.
  • Mix the Ingredients

    • In a large bowl, combine shredded cabbage, carrots, flour, baking powder, turmeric, salt, and black pepper.
    • Add the flax egg and mix well until everything is evenly coated.
  • Cook the Fritters

    • Heat a pan over medium heat and add a little olive oil.
    • Scoop small portions of the mixture into the pan, flattening them slightly.
    • Cook for 3-4 minutes on each side, until golden brown and crispy.
  • Serve and Enjoy

    • Remove from the pan and place on a paper towel to absorb excess oil.
    • Serve warm with your favorite dipping sauce, such as vegan yogurt, tahini dressing, or a garlic aioli.

Notes

  • If the mixture is too wet, add a little more flour to help bind the fritters.
  • For an oil-free version, bake at 375°F (190°C) for 20-25 minutes, flipping halfway through.
  • Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat in a pan or oven for best results.
