- 2 tbsp flax seeds
- 7 tbsp water
- 500g cabbage, shredded (about 4 cups)
- 200g carrots, shredded (about 2 cups)
- 2 tbsp all-purpose flour (or chickpea flour for gluten-free)
- 1 tsp baking powder
- 1 tsp turmeric
- Salt, to taste
- Black pepper, to taste (optional)
- Olive oil, for frying

Prepare the Flax Egg
- In a small bowl, mix the flax seeds with water. Let sit for 10 minutes until thickened.

Mix the Ingredients
- In a large bowl, combine shredded cabbage, carrots, flour, baking powder, turmeric, salt, and black pepper.
- Add the flax egg and mix well until everything is evenly coated.

Cook the Fritters
- Heat a pan over medium heat and add a little olive oil.
- Scoop small portions of the mixture into the pan, flattening them slightly.
- Cook for 3-4 minutes on each side, until golden brown and crispy.

Serve and Enjoy
- Remove from the pan and place on a paper towel to absorb excess oil.
- Serve warm with your favorite dipping sauce, such as vegan yogurt, tahini dressing, or a garlic aioli.
Notes
- If the mixture is too wet, add a little more flour to help bind the fritters.
- For an oil-free version, bake at 375°F (190°C) for 20-25 minutes, flipping halfway through.
- Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat in a pan or oven for best results.
