- 4 green onions (scallions), finely chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground black pepper
- 2–3 tablespoons olive oil, for frying
Instructions
- Prepare the zucchini – Grate the zucchini, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid.
- Make the batter – In a bowl, mix the zucchini with eggs, green onions, flour, baking powder, and black pepper. Stir until combined.
- Heat the oil – In a large skillet, heat olive oil over medium heat.
- Cook the fritters – Drop spoonfuls of batter into the pan, flatten slightly, and fry for 2–3 minutes per side until golden brown.
- Drain and serve – Remove and place on paper towels to absorb excess oil. Serve warm with yogurt or your favorite sauce.
