- 2 pounds boneless, skinless chicken breasts
- 1 pound fresh green beans, trimmed
- 4 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine 2 tablespoons of olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, black pepper, and red pepper flakes (if using). Mix well.
- Add the chicken breasts to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
- While the chicken is marinating, prepare a baking dish by greasing it with the remaining 2 tablespoons of olive oil.
- Place the marinated chicken breasts in the baking dish. Arrange the green beans around the chicken.
- Drizzle any remaining marinade over the green beans and chicken.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley.
