Instructions
- Preheat your oven to 350°F (175°C). Grease a large pizza pan or a baking sheet with cooking spray or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Spread the cookie dough evenly onto the prepared pizza pan, shaping it into a large circle. Bake for 12-15 minutes or until the edges are lightly golden. Remove from the oven and let it cool completely.
- In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Once the cookie base is completely cool, spread the cream cheese mixture evenly over the top.
- Arrange the mixed fresh fruit on top of the cream cheese layer, creating a festive design.
- If desired, warm the strawberry preserves in the microwave for about 15 seconds and drizzle it over the fruit for added sweetness and shine.
- Chill the fruit pizza in the refrigerator for at least 30 minutes before slicing and serving.
