For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper

For the Potatoes:

  • 1.5 lbs baby Yukon Gold or red potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper

Optional Garnish:

  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
    • Line a large baking sheet with parchment paper or lightly grease it.
  2. Prepare the Chicken:
    • Pat the chicken dry with paper towels to help the seasoning stick.
    • In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper.
    • Rub olive oil over the chicken and coat evenly with the seasoning mixture.
  3. Season the Potatoes:
    • In a large bowl, toss the halved potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and pepper.
    • Ensure the potatoes are fully coated with the mixture.
  4. Assemble on the Pan:
    • Place the seasoned chicken on one side of the prepared baking sheet.
    • Spread the potatoes in a single layer on the other side, leaving space between them for even roasting.
  5. Bake:
    • Roast in the preheated oven for 25–30 minutes. Flip the potatoes halfway through for even crisping.
    • Use a meat thermometer to check that the chicken reaches an internal temperature of 165°F (74°C).
  6. Optional Finishing Touch:
    • In the last 5 minutes of cooking, sprinkle extra Parmesan over the chicken and potatoes.
    • Switch the oven to broil for a golden, crispy finish.
  7. Serve and Garnish:
    • Remove the baking sheet from the oven and sprinkle fresh parsley over the chicken and potatoes.
    • Serve hot and enjoy!
