Ingredients

Scale

For the Chicken:

  • 2 lbs chicken tenders, breasts, or thighs, cut into 3-inch pieces
  • 2 tablespoons olive oil

Chicken Seasoning Mix:

  • 1½ tablespoons dry ranch seasoning
  • 1 teaspoon dried dill
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Garlic Parmesan Butter Sauce:

  • 1 stick unsalted butter
  • 810 garlic cloves, minced
  • ½ cup grated parmesan cheese
  • 1 tablespoon hot sauce (adjust to taste)
  • 2 teaspoons red pepper flakes
  • ⅓ cup fresh parsley, minced
  • 1 tablespoon dry ranch seasoning
  • 1 teaspoon dried dill
  • ½ teaspoon onion powder

Optional:

  • Wooden skewers, soaked in water for 30 minutes if grilling or air frying.

Instructions

  1. Prep the Skewers:
Soak wooden skewers in water for 30 minutes to prevent burning.

  2. Season the Chicken:
In a bowl, mix all the chicken seasoning spices. Toss the chicken pieces with olive oil, then coat thoroughly with the seasoning blend.

  3. Assemble:
Thread chicken tightly onto skewers, leaving no gaps between pieces.

  4. Make the Garlic Parmesan Butter Sauce:
Melt butter in a saucepan or microwave-safe bowl. Stir in garlic, parmesan, hot sauce, red pepper flakes, parsley, and the rest of the sauce seasonings. Set aside. Reserve ⅓ of the sauce for basting during cooking; save the rest for after the chicken is fully cooked.

  5. Cook the Chicken Skewers:

    Air Fryer Method:

    • Air fry 2–3 skewers at 400°F for 5 minutes.
    • Flip, baste with reserved sauce, and cook for 2 more minutes.
    • Flip again, baste, and cook another 5–6 minutes until internal temperature reaches 165°F.
    • Finish with a final baste using the clean sauce and sprinkle extra parmesan on top.

    Oven Method:

    • Bake at 450°F for 14 minutes, flipping and basting halfway.
    • Broil for 2 minutes to brown the top. Baste again and add a final sprinkle of parmesan before serving.

    Grill Method:

    • Grill over medium-high heat for 5–6 minutes per side.
    • Baste throughout cooking and finish with the remaining clean sauce and more parmesan.

Notes

  • If your butter sauce separates, whisk in a tablespoon of softened butter to re-emulsify.
  • Can be prepped ahead and cooked fresh for parties.
  • These pair well with ranch dip, roasted veggies, or over a bed of greens.
  • For extra heat, double the red pepper flakes or add a splash of buffalo sauce.
