  • 16fl oz (450ml / 2 cups) water
  • 7oz (190g / 1 medium-sized) zucchini, grated
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • 1 large egg
  • ¼ cup all-purpose flour (or chickpea flour for a gluten-free option)
  • Olive oil, for frying

Instructions

  • In a saucepan, combine the rinsed lentils and water. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until soft. Drain any excess water and mash the lentils lightly with a fork.
  • Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  • In a large bowl, combine the mashed lentils, grated zucchini, garlic, onion, parsley, cumin, paprika, salt, black pepper, egg, and flour. Mix well to form a thick batter.
  • Shape the mixture into small patties, pressing them together firmly.
  • Heat olive oil in a pan over medium heat. Cook the patties for about 3-4 minutes per side until golden brown and crispy.
  • Remove from the pan and drain on a paper towel. Serve warm with your favorite dipping sauce.

Notes

  • To bake instead of frying, place patties on a parchment-lined baking sheet, brush with olive oil, and bake at 375°F (190°C) for 20-25 minutes, flipping halfway through.
  • Store leftovers in an airtight container in the fridge for up to three days. Reheat in a pan or oven for best results.
  • Freeze cooked patties in a single layer, then transfer to a freezer-safe bag. Reheat in the oven or pan-fry to restore crispiness.
