Description

A delicious and healthy recipe for grilled patty pan squash seasoned with garlic and herbs.


Ingredients

  • 2 medium patty pan squash, sliced into 1/2-inch thick rounds
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill to medium heat.
  2. In a large bowl, combine the olive oil, minced garlic, oregano, thyme, salt, and pepper.
  3. Add the sliced patty pan squash to the bowl and toss until the squash is evenly coated with the oil and herb mixture.
  4. Place the squash slices directly on the grill grates. Grill for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
  5. Remove the squash from the grill and transfer to a serving platter. Garnish with fresh parsley before serving.

Notes

  • For added flavor, marinate the squash in the herb mixture for 30 minutes before grilling.
  • Try adding a sprinkle of grated Parmesan cheese on top just before serving for a cheesy twist.
