- 1 pound ground beef (80/20)
- 1 medium head of cauliflower, chopped into small florets
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the ground beef to the skillet, breaking it apart with a spatula. Season with smoked paprika, Italian seasoning, salt, and pepper. Cook until the beef is browned and cooked through, about 7-10 minutes.
- While the beef is cooking, steam the cauliflower florets until tender, about 5-7 minutes.
- Once the beef is cooked, add the steamed cauliflower to the skillet. Stir everything together and cook for an additional 3-5 minutes to combine the flavors.
- If using, sprinkle the shredded cheddar cheese on top and cover the skillet for 2-3 minutes until the cheese is melted.
- Remove from heat and garnish with chopped parsley before serving.
Notes
- For a spicier dish, add red pepper flakes or diced jalapeños when cooking the beef.
- You can substitute ground turkey or chicken for a leaner option, adjusting the cooking time as needed.
