Bowl Filling:

- 2 cups cucumber, diced
- 2 cups cooked white rice
- 1 cup red onion, thinly sliced
- 1/2 cup feta cheese (optional)
Tzatziki Sauce:
- 1 cup plain Greek yogurt (or low-fat sour cream)
- 1/2 cup cucumber, grated
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon minced garlic
- 1/4 teaspoon salt
Instructions
- Marinate the Chicken:
- In a large bowl, whisk together olive oil, honey, lemon juice, lemon zest, oregano, basil, garlic powder, salt, red pepper flakes, and black pepper.
- Add chicken breasts, coating them fully.
- Cover and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
- Cook the Chicken:
- Heat a grill pan or skillet over medium-high heat.
- Cook chicken for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F / 75°C).
- Let rest for 5 minutes, then slice into strips.
- Prepare the Tzatziki Sauce:
- In a small bowl, mix Greek yogurt, grated cucumber, fresh dill, olive oil, lemon juice, minced garlic, and salt.
- Stir well and refrigerate until serving.
- Assemble the Bowls:
- In each serving bowl, layer cooked rice, romaine lettuce, cherry tomatoes, cucumber, and red onion.
- Add sliced chicken on top.
