High-Protein Ground Turkey Stuffed Sweet Potatoes are delicious!

These Ground Turkey Stuffed Sweet Potatoes are the ultimate balance of comfort and nutrition—tender mashed sweet potatoes loaded with spiced lean turkey, veggies, and melted cheddar.   • 4 medium-sized sweet potatoes

  • ⅓ teaspoon ground cumin

  • 1 teaspoon avocado oil or olive oil (for mashing)

  • Salt and pepper, to taste

  • 1 pound lean ground turkey

  • 1 tablespoon olive oil (for cooking the turkey)

  • 2 garlic cloves, finely chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1 teaspoon dried oregano

  • 1 teaspoon chili powder

  • 1 cup canned diced tomatoes (with juice)

  • 1 medium zucchini, grated

  • 1 handful chopped spinach

  • 1 cup black beans, rinsed and drained (optional)

  • 1 cup corn kernels, fresh or frozen (optional)

  • 1 cup cheddar cheese, grated

  • 2 green onions, finely sliced

  • Salsa, for topping

  • Plain Greek yogurt, for topping

Instructions

  • Cook the sweet potatoes
    Microwave method: Prick each sweet potato with a fork. Microwave one at a time for 3 minutes per side, until soft.
    Oven method: Preheat oven to 425°F. Prick potatoes and place on a foil-lined baking sheet. Bake for 45–50 minutes until fork-tender. Let cool before handling.

  • Mash the potato base
    Slice sweet potatoes in half lengthwise and scoop out the flesh into a bowl, keeping the skins intact. Mash the flesh with 1 teaspoon oil, ⅓ teaspoon cumin, and salt and pepper to taste.

  • Cook the turkey filling
    In a large skillet, heat 1 tablespoon olive oil over medium heat. Add garlic and sauté until fragrant. Add ground turkey and cook until browned. Stir in cumin, paprika, oregano, and chili powder. Mix in diced tomatoes, zucchini, spinach, and (if using) black beans and corn. Cook until everything is warmed through and combined.

  • Assemble the stuffed potatoes
    Arrange sweet potato skins on a baking sheet. Spoon the mashed sweet potato base into each shell, then top with the turkey filling. Sprinkle generously with shredded cheddar cheese.

  • Broil to finish
    Broil the stuffed potatoes for 6–8 minutes, or until the cheese is melted and bubbling. Remove and garnish with sliced green onions, salsa, and Greek yogurt as desired.
