- 1 cup all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup cottage cheese
- 1/2 cup milk
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and chopped
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the flour, oats, baking powder, baking soda, and salt. Mix well and set aside.
- In another bowl, whisk together the cottage cheese, milk, honey (or maple syrup), eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped strawberries.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For added flavor, consider mixing in a teaspoon of cinnamon or a handful of chopped nuts.
- Substitute the strawberries with blueberries or raspberries for a different fruity twist.
