Description
A delicious fusion of traditional Reuben sandwich flavors with a spicy twist from kimchi.
Ingredients

- 1 cup kimchi, drained and chopped
- 8 ounces corned beef, sliced
- 4 slices Swiss cheese
- 4 slices rye bread
- 4 tablespoons Russian or Thousand Island dressing
- 2 tablespoons unsalted butter, softened
Instructions
- Heat a skillet over medium heat.
- Spread 1 tablespoon of butter on one side of each slice of rye bread.
- On the unbuttered side of two slices, spread 2 tablespoons of dressing.
- Layer half of the kimchi, followed by corned beef, and top with 2 slices of Swiss cheese.
- Place the other two slices of bread on top, buttered side up.
- Carefully place the sandwiches in the skillet and cook for about 3-4 minutes until golden brown.
- Flip the sandwiches and cook for another 3-4 minutes until the cheese is melted and the other side is golden brown.
- Remove from the skillet, slice in half, and serve warm.
Notes
- For a vegetarian version, substitute the corned beef with grilled portobello mushrooms or tempeh.
- Add sliced pickles or jalapeños for an extra kick of flavor.
