These Lasagna Stuffed Mushrooms bring all the rich, cheesy flavors of traditional lasagna in a delicious, low-carb form. Perfect for a keto-friendly meal or an Italian-inspired appetizer, these stuffed mushrooms are hearty, satisfying, and easy to make!

Mushrooms:

  • 4 large portobello mushroom caps (34 inches in diameter)
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Filling:

  • ½ pound ground beef
  • 2 cups marinara sauce, divided
  • 1 cup mozzarella cheese, shredded, divided
  • ½ cup ricotta cheese
  • ½ cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Chopped parsley for garnish

Instructions

  1. Preheat & Prep – Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Prepare the Mushrooms – Wipe the mushrooms with a damp cloth, remove the stems, and gently scrape out the gills. Brush each cap with olive oil and season with salt and pepper.
  3. Cook the Beef – In a skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Drain excess grease. Stir in 1 cup of marinara sauce and let it simmer for a few minutes.
  4. Mix the Ricotta Filling – In a bowl, combine ¼ cup of mozzarella cheese, ricotta, parmesan, Italian seasoning, salt, and pepper.
  5. Assemble the Mushrooms – Divide the ricotta mixture evenly among the mushroom caps, spreading it out. Top each with 3-4 tablespoons of the beef mixture, then sprinkle the remaining mozzarella cheese over the tops.
  6. Bake to Perfection – Place the stuffed mushrooms on the baking sheet and bake for 20 minutes, or until the cheese is melted and bubbly and the mushrooms are tender.
  7. Garnish & Serve – Sprinkle with chopped parsley and serve with the remaining marinara sauce for dipping.
