- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 pound fresh green beans, trimmed and cut into 2-inch pieces
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the green beans to the pot and sauté for about 3-4 minutes, stirring occasionally.
- Pour in the diced tomatoes with their juice and the vegetable broth. Stir to combine.
- Add the ground cumin, ground coriander, paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for about 25-30 minutes, or until the green beans are tender.
- Stir in the lemon juice just before serving.
- Garnish with fresh parsley and serve warm.
Notes
- For added protein, consider adding cooked chickpeas or lentils to the stew.
- If you prefer a spicier flavor, add a pinch of red pepper flakes or a diced jalapeño during the cooking process.
