Description

These Lucky Charms Rice Krispies Treats are the perfect way to add a touch of magic to any St. Patrick’s Day celebration. Quick, easy, and packed with festive charm, they make a delicious snack for kids and adults alike!

Ingredients

Scale
  • 6 tablespoons butter
  • 1 (10-ounce) bag white mini marshmallows
  • Green food coloring (about 20-40 drops, or to desired shade)
  • 6 cups Lucky Charms cereal
  • 1 teaspoon vanilla extract
  • 1 cup colored mini marshmallows (optional, for topping)
  • Green sprinkles or St. Patrick’s Day-themed sprinkles (optional, for decoration)

Instructions

  1. Prepare the Pan – Lightly spray a 9×12 baking dish with cooking spray and set it aside.
  2. Melt the Butter & Marshmallows – In a large pot over medium heat, melt the butter. Reduce heat to low and add the mini marshmallows, stirring continuously until fully melted.
  3. Color the Mixture – Add green food coloring to the melted marshmallows, stirring until you achieve the desired shade of green. Remove from heat.
  4. Mix in the Cereal – Stir in the vanilla extract, then gradually fold in the Lucky Charms cereal, ensuring each piece is evenly coated in the marshmallow mixture.
  5. Add Extra Magic – If using colored mini marshmallows, gently stir in half of them, leaving some visible for extra color.
  6. Shape the Treats – Pour the mixture into the prepared baking dish. Using wax paper, parchment paper, or greased fingers, press the mixture lightly to form an even layer.
  7. Decorate & Set – Sprinkle with green sprinkles and press the remaining colored marshmallows into the top for extra festivity. Allow the treats to set before cutting.
  8. Speed Up the Process – If you’re in a hurry, place the dish in the freezer for 10 minutes to set faster.
  9. Cut & Serve – Slice into squares and enjoy a fun, festive, and delicious treat!

Notes

  • Store treats in an airtight container at room temperature for up to 3 days.
  • For extra crunch, add 1 cup of Rice Krispies cereal along with the Lucky Charms.
