2 cups semi-firm cheese cubes (cheddar, Gouda, or Havarti)
1 cup thick-sliced salami rounds (mild or spicy)
1 cup mini pickles (cornichons or dill pickles)
1/2 cup diced red, yellow, or orange bell peppers
1/4 cup chopped fresh herbs (parsley or dill)
1/3 cup extra virgin olive oil
2 tablespoons white wine vinegar or apple cider vinegar
1 clove garlic, minced
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Cube the cheese, slice the salami, chop the bell peppers, and halve or quarter any large pickles.

  2. In a large jar or airtight container, layer the cheese, salami, pickles, and peppers to ensure a balanced mix.

  3. In a small bowl, whisk together olive oil, vinegar, minced garlic, black pepper, and red pepper flakes. Stir in the chopped herbs.

  4. Pour the marinade over the layered ingredients in the jar, pressing gently so everything is coated.

  5. Seal the jar and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to blend.
