- 2 large zucchinis, sliced into half-moons
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, sliced
- 1/4 cup Kalamata olives, pitted and halved
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
- 1/2 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F.
- In a large mixing bowl, combine the sliced zucchinis, chicken pieces, cherry tomatoes, red onion, olives, garlic, oregano, basil, salt, pepper, and olive oil. Toss everything together until well coated.
- Transfer the mixture to a large baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the dish from the oven and sprinkle the crumbled feta cheese over the top.
- Return to the oven and bake for an additional 5 minutes, until the feta is slightly melted.
- Let the dish cool for a few minutes before serving.
- Garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the chicken in lemon juice and herbs for an hour before cooking.
- You can also substitute the chicken with shrimp for a seafood twist.
