- 1 cup fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup almond flour
- 1/4 cup chopped sun-dried tomatoes (optional)
- 1/4 cup sliced black olives (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped spinach, feta cheese, mozzarella cheese, Parmesan cheese, garlic powder, oregano, black pepper, and salt. Mix well.
- In a separate small bowl, beat the egg and then add it to the cheese mixture. Stir until fully combined.
- Gradually add the almond flour to the mixture, stirring until a thick dough forms. If using, fold in the sun-dried tomatoes and olives.
- Using a tablespoon, scoop out portions of the mixture and place them onto the prepared baking sheet, flattening each scoop slightly to form a crisp shape.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the crisps are firm to the touch.
- Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a spicier version, add a pinch of red pepper flakes to the mixture.
- Substitute the spinach with kale or arugula for a different flavor profile.
