Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup almond flour
  • 1/4 cup chopped sun-dried tomatoes (optional)
  • 1/4 cup sliced black olives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chopped spinach, feta cheese, mozzarella cheese, Parmesan cheese, garlic powder, oregano, black pepper, and salt. Mix well.
  3. In a separate small bowl, beat the egg and then add it to the cheese mixture. Stir until fully combined.
  4. Gradually add the almond flour to the mixture, stirring until a thick dough forms. If using, fold in the sun-dried tomatoes and olives.
  5. Using a tablespoon, scoop out portions of the mixture and place them onto the prepared baking sheet, flattening each scoop slightly to form a crisp shape.
  6. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the crisps are firm to the touch.
  7. Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
