Description

Milanese Osso Buco is a flavorful comfort dish made with veal shanks, slow-cooked to perfection in a rich sauce.


Ingredients

  • 2 pounds veal shanks, cut into 1.5-inch thick slices
  • 1/4 cup all-purpose flour
  • Salt and black pepper, to taste
  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 1 medium celery stalk, diced
  • 3 cloves garlic, minced
  • 1 cup dry white wine
  • 1 cup beef broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 325°F.
  2. Pat the veal shanks dry with paper towels and season with salt and pepper. Dredge each piece in flour, shaking off the excess.
  3. In a large, heavy pot or Dutch oven, heat the olive oil over medium-high heat. Add the veal shanks and brown on all sides, about 8-10 minutes. Remove the shanks and set aside.
  4. In the same pot, add the onion, carrot, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.
  5. Pour in the white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 2-3 minutes.
  6. Return the veal shanks to the pot. Add the beef broth, diced tomatoes, thyme, bay leaf, and additional salt and pepper to taste. Bring to a simmer.
  7. Cover the pot and transfer it to the preheated oven. Cook for 2 to 2.5 hours, or until the meat is tender and falling off the bone.
  8. Remove the pot from the oven and discard the bay leaf. Stir in the lemon zest and parsley before serving.

Notes

  • For a richer flavor, consider adding a tablespoon of tomato paste when sautéing the vegetables.
  • If you prefer a thicker sauce, remove the veal shanks once cooked and reduce the sauce on the stovetop for 10-15 minutes before serving.
  • Serve with risotto or crusty bread to soak up the delicious sauce.
