Ingredients

Scale
  • 2 large eggs
  • 50g (1/4 cup) sugar
  • 125g (1/2 cup) yogurt
  • 8g (1 tablespoon) vanilla sugar
  • 1/2 teaspoon salt
  • 50 ml (1/4 cup) sunflower oil
  • Zest of 1 lemon
  • 420g (3 1/2 cups) all-purpose flour
  • 10g (2 teaspoons) baking powder
  • 2 medium-sized apples, peeled and diced
  • 2 tablespoons sugar (for caramelizing apples)
  • 1 tablespoon butter
  • 1 tablespoon apricot jam

Instructions

  • Caramelize the Apples

    • In a non-stick pan, melt the butter over medium heat.
    • Add the diced apples and 2 tablespoons of sugar.
    • Stir occasionally and cook for 5–7 minutes until the apples soften and become caramelized. Set aside.
  • Prepare the Batter

    • In a mixing bowl, whisk together the eggs, sugar, vanilla sugar, salt, yogurt, sunflower oil, and lemon zest.
    • Gradually add the flour and baking powder, stirring until a smooth dough forms.
  • Combine with Apples

    • Gently fold the caramelized apples into the dough, making sure they are evenly distributed.
  • Cook on the Stovetop

    • Heat a large non-stick pan over low heat and lightly grease it with butter or oil.
    • Pour the batter into the pan, spreading it evenly.
    • Cover with a lid and cook for 15–20 minutes on one side.
    • Carefully flip the dessert and cook for another 10 minutes until golden brown.
  • Glaze and Serve

    • Once cooked, brush the top with apricot jam for a glossy, flavorful finish.
    • Let it cool slightly before slicing and serving warm.

Notes

  • For extra flavor, sprinkle cinnamon or nutmeg into the batter.
  • Swap apples for pears, peaches, or berries for a different variation.
  • If flipping is difficult, slide the cake onto a plate, then flip it back into the pan.
  • Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 4 days.
  • Reheat gently in a pan or microwave before serving.
