Nutty Fruit and Seed Energy Bars are a delicious and nutritious snack packed with oats, nuts, seeds, and dried fruit, perfect for fueling your day.


Ingredients

  • 2 cups rolled oats
  • 1 cup mixed nuts (almonds, walnuts, pecans)
  • 1 cup mixed seeds (pumpkin seeds, sunflower seeds, chia seeds)
  • 1 cup dried fruit (raisins, cranberries, apricots)
  • 1/2 cup nut butter (peanut butter or almond butter)
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. In a large mixing bowl, combine the rolled oats, mixed nuts, mixed seeds, dried fruit, cinnamon, and salt. Stir until well combined.
  3. In a small saucepan over low heat, melt the nut butter and honey (or maple syrup) together, stirring until smooth. Remove from heat and stir in the vanilla extract.
  4. Pour the melted mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
  5. Transfer the mixture to the prepared baking dish and press it down firmly with a spatula or your hands to create an even layer.
  6. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. Remove from the oven and let cool in the pan for about 10 minutes.
  7. Use the parchment overhang to lift the bars out of the pan and place them on a cutting board. Allow to cool completely before cutting into squares or rectangles.

Notes

  • For a chocolatey twist, add 1/2 cup of dark chocolate chips to the mixture before baking.
  • Substitute the dried fruit with your favorite fresh fruit, like mashed bananas or applesauce, for a different flavor profile.
