-
2 ½ cups graham cracker crumbs (about 18 full-size crackers)
-
¼ cup granulated sugar
-
½ cup unsalted butter, melted
For the Cheesecake Layer:
-
2 packages (8 oz each) cream cheese, softened
-
¾ cup granulated sugar
-
2 large eggs
-
1 teaspoon vanilla extract
For the Pecan Pie Topping:
-
1 cup packed light brown sugar
-
½ cup light corn syrup
-
½ cup heavy whipping cream
-
¼ cup unsalted butter
-
½ teaspoon kosher salt
-
1 teaspoon vanilla extract
-
2 cups chopped pecans
Instructions
-
Prepare the Crust
Preheat oven to 350°F (175°C). Line a 13×9-inch baking dish with parchment paper. In a food processor, pulse graham crackers and sugar until finely ground. Add melted butter and blend. Press mixture firmly into the prepared dish to form an even crust. -
Make the Cheesecake Layer
In a large mixing bowl, beat the softened cream cheese with sugar, eggs, and vanilla extract until smooth and fluffy, about 3–5 minutes. Pour over the crust and spread evenly. -
Prepare the Pecan Topping
In a saucepan over medium heat, combine brown sugar, corn syrup, cream, butter, and salt. Stir constantly and bring to a gentle boil for 1 minute. Remove from heat and stir in vanilla and chopped pecans. Let the topping cool slightly. -
Assemble and Bake
Carefully spoon the pecan mixture over the cheesecake layer, spreading it evenly. Bake for 35 minutes or until set. Allow to cool at room temperature. -
Chill and Slice
Refrigerate for at least 4 hours, or overnight for best results. Lift out using parchment, slice into bars, and serve chilled.
