Ingredients

Scale

For the Graham Cracker Crust:

  • 2 ½ cups graham cracker crumbs (about 18 full-size crackers)

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

For the Cheesecake Layer:

  • 2 packages (8 oz each) cream cheese, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

For the Pecan Pie Topping:

  • 1 cup packed light brown sugar

  • ½ cup light corn syrup

  • ½ cup heavy whipping cream

  • ¼ cup unsalted butter

  • ½ teaspoon kosher salt

  • 1 teaspoon vanilla extract

  • 2 cups chopped pecans

Instructions

  1. Prepare the Crust
Preheat oven to 350°F (175°C). Line a 13×9-inch baking dish with parchment paper. In a food processor, pulse graham crackers and sugar until finely ground. Add melted butter and blend. Press mixture firmly into the prepared dish to form an even crust.

  2. Make the Cheesecake Layer
In a large mixing bowl, beat the softened cream cheese with sugar, eggs, and vanilla extract until smooth and fluffy, about 3–5 minutes. Pour over the crust and spread evenly.

  3. Prepare the Pecan Topping
In a saucepan over medium heat, combine brown sugar, corn syrup, cream, butter, and salt. Stir constantly and bring to a gentle boil for 1 minute. Remove from heat and stir in vanilla and chopped pecans. Let the topping cool slightly.

  4. Assemble and Bake
Carefully spoon the pecan mixture over the cheesecake layer, spreading it evenly. Bake for 35 minutes or until set. Allow to cool at room temperature.

  5. Chill and Slice
Refrigerate for at least 4 hours, or overnight for best results. Lift out using parchment, slice into bars, and serve chilled.
