1 cup fresh pineapple chunks
1-inch piece fresh ginger, peeled and grated
2 tablespoons honey or agave syrup
½ cup water
Ice
2 cups ginger beer (regular or sugar-free)
Fresh mint leaves, for garnish
Pineapple wedges, for garnish


Instructions

  1. In a blender, combine pineapple chunks, grated ginger, honey or agave, and water. Blend until smooth.

  2. Strain the blended mixture through a fine-mesh sieve into a pitcher to remove pulp and ginger bits.

  3. Fill two glasses with ice. Pour the pineapple-ginger mixture into each glass, filling about one-third of the way.

  4. Top each glass with ginger beer.

  5. Stir gently to combine. Garnish with fresh mint leaves and pineapple wedges.

Notes
