Ingredients
1 cup fresh pineapple chunks
1-inch piece fresh ginger, peeled and grated
2 tablespoons honey or agave syrup
½ cup water
Ice
2 cups ginger beer (regular or sugar-free)
Fresh mint leaves, for garnish
Pineapple wedges, for garnish
Instructions

In a blender, combine pineapple chunks, grated ginger, honey or agave, and water. Blend until smooth.

Strain the blended mixture through a fine-mesh sieve into a pitcher to remove pulp and ginger bits.
