For the Fried Rice:

  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas and carrots
  • ½ cup frozen corn kernels
  • ½ cup red cabbage, shredded
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 4 cups cooked rice, chilled
  • ¼ cup soy sauce
  • 2 green onions, sliced

Instructions

  1. Sauté the Aromatics – Heat oil in a large pan over medium heat. Add diced onion, garlic, and ginger. Cook for 2-3 minutes until fragrant.
  2. Cook the Vegetables – Stir in the red bell pepper, peas, carrots, corn, and red cabbage. Sauté for another 3-4 minutes until slightly tender.
  3. Add the Rice – Stir in the chilled, cooked rice and mix well to combine with the vegetables.
  4. Season and Finish – Pour in the soy sauce and stir well. Cook for 2-3 minutes, allowing the rice to absorb the flavors.
  5. Garnish and Serve – Add sliced green onions, give it a final stir, and serve hot!
