- 2 pounds carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1 tablespoon honey
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, toss the carrot sticks with olive oil, salt, and black pepper until evenly coated. Spread the carrots in a single layer on the prepared baking sheet.
- Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, tossing halfway through for even cooking.
- While the carrots are roasting, prepare the whipped ricotta. In a medium bowl, combine the ricotta cheese, honey, red pepper flakes, and lemon juice. Use a hand mixer or a whisk to blend until smooth and creamy.
- Once the carrots are done, remove them from the oven and let them cool slightly.
- To serve, spread the whipped ricotta on a serving platter and top with the roasted carrots. Drizzle with additional honey if desired and garnish with chopped parsley.
Notes
- For a sweeter touch, add a sprinkle of cinnamon to the carrots before roasting.
