This Skillet Lasagna delivers all the hearty comfort of classic lasagna—minus the fuss. Made in one pan with tender noodles, savory ground beef, rich marinara, and creamy cheeses, it’s a quick weeknight favorite that satisfies big-time with fewer dishes to wash.

  • 8 ounces lasagna noodles, broken into small pieces

  • 1 teaspoon olive oil

  • 1 pound 93% lean ground beef

  • 1/2 teaspoon kosher salt

  • Fresh black pepper, to taste

  • 1/2 medium onion, chopped

  • 3 cloves garlic, minced

  • 1 tablespoon tomato paste

  • 1 teaspoon dried oregano

  • 2 cups jarred marinara sauce

  • 1 1/4 cups water

  • 6 tablespoons part-skim ricotta cheese

  • 1 cup part-skim shredded mozzarella cheese

  • 2 tablespoons grated Pecorino Romano or Parmesan cheese

  • 2 tablespoons chopped fresh basil, for garnish

Instructions

  1. Prep the Pasta:
    Break the lasagna noodles into small, bite-sized pieces. Set aside.

  2. Cook the Beef:
    Heat olive oil in a large, deep nonstick skillet over medium heat. Add ground beef, season with salt and pepper, and cook until browned. Drain any excess fat if necessary.

  3. Add Aromatics:
    Stir in chopped onion and garlic. Cook for about 2 minutes until fragrant. Mix in tomato paste and oregano, and cook for 1 more minute.

  4. Create the Sauce:
    Pour in the marinara sauce and water. Stir to combine. Add broken lasagna noodles and mix well.

  5. Simmer Everything Together:
    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, stirring occasionally, until the noodles are cooked through.

  6. Top with Cheeses:
    Dollop ricotta cheese over the skillet, then sprinkle evenly with mozzarella and Pecorino Romano. Cover and let cook another 3–5 minutes, or until the cheese is melted and gooey.

  7. Garnish and Serve:
    Finish with a sprinkle of fresh chopped basil. Serve hot and enjoy straight from the skillet!

  • Substitute ground turkey or plant-based crumbles for a lighter or vegetarian twist.

  • Use gluten-free lasagna noodles if needed.

  • Freshly grated cheese melts better and adds more flavor than pre-shredded.
