Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 1/2 cup heavy whipping cream
  • Fresh strawberries and mint leaves for garnish

Instructions

  1. In a blender or food processor, combine the cottage cheese, sliced strawberries, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Gently fold the whipped cream into the strawberry cottage cheese mixture until well combined. Be careful not to deflate the whipped cream.
