- 1 cup cottage cheese
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 1/2 cup heavy whipping cream
- Fresh strawberries and mint leaves for garnish
Instructions
- In a blender or food processor, combine the cottage cheese, sliced strawberries, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth and creamy.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the strawberry cottage cheese mixture until well combined. Be careful not to deflate the whipped cream.
- Spoon the mousse into serving dishes or glasses and refrigerate for at least 1 hour to chill and set.
- Before serving, garnish with additional fresh strawberries and mint leaves.
Notes
- For a dairy-free option, substitute cottage cheese with silken tofu and use coconut cream instead of heavy whipping cream.
- Add a tablespoon of chia seeds for extra texture and nutrition, allowing the mousse to sit for an additional 15 minutes to thicken.
