Instructions
- Prepare the Potatoes: Peel and cut the potatoes into bite-sized cubes. Boil them in salted water until soft and easily pierced with a fork. Drain and let cool slightly.
- Mash the Potatoes: Once cooled, mash the potatoes until smooth, keeping the texture slightly firm but creamy.
- Mix Ingredients: Add 1 egg, salt, paprika, cornstarch, grated cheese, chopped parsley, and green onions to the mashed potatoes. Mix well until everything is fully incorporated.
- Form Patties: Shape the potato mixture into small patties or discs.
- Coat with Breadcrumbs: Dip each patty into breadcrumbs, ensuring it is evenly coated.
- Fry the Patties: Heat oil in a large skillet over medium heat. Fry the patties until golden and crispy on both sides, about 3-4 minutes per side.
- Drain and Serve: Once fried, place the patties on paper towels to drain excess oil. Garnish with more fresh parsley and serve warm.
