Ingredients

Scale

For the Cookie Dough:

  • 2½ cups (300g) flour
  • A pinch of salt
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla sugar
  • 5 tablespoons (100g) butter, softened
  • ⅔ cup (150g) sour cream
  • 1 egg

For the Orange Filling:

  • 2 oranges (450g), peeled and finely chopped
  • ½ cup (100g) sugar
  • 2 tablespoons (30g) cornstarch

Instructions

  1. Prepare the Dough:

    • In a bowl, mix the flour, salt, baking powder, and vanilla sugar.
    • Add the butter and rub it into the flour until the mixture is crumbly.
    • Stir in the sour cream and egg, then knead into a smooth dough. Cover and refrigerate for 30 minutes.
  2. Make the Orange Filling:

    • In a saucepan over medium heat, cook the chopped oranges with sugar until soft.
    • Stir in the cornstarch and continue cooking until the mixture thickens. Let it cool completely.
  3. Shape the Cookies:

    • Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
    • Roll out the dough to about ¼-inch thickness and cut into circles or desired shapes.
    • Spoon a small amount of the orange filling onto half of the cookies, then top with another cookie and press the edges to seal.
  4. Bake to Perfection:

    • Place the cookies on the baking sheet and bake for 15-18 minutes, or until golden brown.
  5. Cool & Serve:

    • Allow the cookies to cool before serving. Enjoy with tea, coffee, or a dusting of powdered sugar!

Notes

  • Chilling the dough: Refrigerating the dough before rolling helps prevent the cookies from spreading too much.
  • Filling variations: You can add a touch of cinnamon or a splash of orange zest for extra flavor.
  • Storage tips: Keep the cookies in an airtight container at room temperature for up to five days.
  • Serving suggestion: These cookies pair perfectly with tea, coffee, or a drizzle of chocolate for an extra indulgent touch.
