- 160g banana (about 1 large banana), mashed
- 110g carrots, finely grated
- 200g instant rolled oats
- 150g dried fruits (such as raisins, dates, or apricots), chopped
- 2 tablespoons shelled sunflower seeds
- 2 tablespoons sesame seeds
- 120ml milk (or water or orange juice for a different flavor)
- 0.5 teaspoon baking soda
Instructions
- Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a large mixing bowl, combine the mashed banana, grated carrots, oats, dried fruits, sunflower seeds, and sesame seeds.
- Add the milk (or your preferred liquid) and mix well. Stir in the baking soda and allow the mixture to sit for 10 minutes.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until the cake is firm and lightly golden on top.
- Remove from the oven and let cool before slicing. Serve as is, or with a drizzle of honey or nut butter for extra flavor.
