These cabbage rolls are incredibly easy to make and packed with flavor. Tender cabbage leaves wrap around a deliciously seasoned vegetable filling, making them a healthy and satisfying meal. Whether you serve them as a main dish or a side, they are sure to impress with their taste and simplicity.

For the Filling:
- 1 cup boiled potato, mashed
- 2 tbsp capsicum, finely chopped
- 2 tbsp grated carrot
- 2 tbsp onion, finely chopped
- ½ tsp green chili, finely chopped
- ½ tsp coriander powder
- ½ tsp salt
- 1 tbsp coriander leaves, chopped
For the Cabbage Rolls:
- 6–8 large cabbage leaves
- 1 tbsp oil
- 1 tsp garlic, minced
- ½ cup tomato puree
- ¼ tsp black pepper
- ¼ tsp salt
- ¼ cup water
Instructions
- Bring a pot of water to a boil and blanch the cabbage leaves for about 2 minutes until they are soft. Drain and set aside.
- In a mixing bowl, combine mashed potatoes, capsicum, carrot, onion, green chili, coriander powder, salt, and coriander leaves. Mix well.
- Take a cabbage leaf and place 2 tablespoons of filling at one end. Roll tightly, folding the sides in to secure the filling. Repeat for all leaves.
- Heat oil in a pan and sauté the garlic until fragrant. Add tomato puree, black pepper, salt, and water, then simmer for 5 minutes.
- Place the cabbage rolls in the pan, cover, and cook on low heat for 10 minutes, allowing the flavors to blend.
- Remove from heat and serve warm, garnished with fresh coriander leaves.
Notes
- To make this dish spicier, add extra green chilies or a pinch of red pepper flakes.
- For added protein, mix in cooked lentils or crumbled paneer into the filling.
- These rolls can be prepared in advance and stored in the refrigerator for up to 3 days.
- Serve with a yogurt dip or a side of rice for a complete meal.
